This recipe is the traditional one that the Sarteneja family used to make. Its texture and acidity point are the classic ones of the Tomate Frito. 

Locally grown plum tomatoes are slowly cooked down in Extra virgin olive oil produced in Extremadura from the Morisca olive variety and perfectly seasoned with Andalusian sea salt.
Excellent as an ingredient for tomato-based recipes.
